A decent satay sauce, made from store cupboard ingredients is a great recipe to have on standby.It’s a simple way to pep up a rotisserie chicken, drizzle over a salad or to use as a dip for veggies. Of course it also goes perfectly with satay chicken skewers - which is a recipe we all love at home. Not forgetting beef satay skewers too (I must get a recipe up for that one on the blog)....

Can’t wait to get the BBQ out! Actually, I won’t be touching the BBQ. Chris won’t let me (I’m good with that!). I’m very fussy when it comes to meatballs. Not only have they got to be juicy and flavourful, but they’ve also got to be perfectly browned, with a light crust on the outside.I thought the only way to do this was to either fry them separately or cook them in the oven. When I finally realised (with this meatballs recipe) that I could save myself a ton of time and washing up by cooking them in the same pan as the sauce AND the courgetti, I was delighted!...

Chocolate has got to me the number one gift on Valentine’s day. I’m sure flowers come a close second, but who hasn’t bought a big box of chocolates for a loved one, with a quiet hope they might get shared out? Yep, guilty. Chris and I are both chocoholics, although I’m probably the worst. No Dairy Milk is safe in the house if I know it’s there. I’m trying to be good at the moment - it’s my birthday in March and I’ve still got 10 pounds to lose....
The kids are back at school and Easter is now officially over! We still have a few more bits of chocolate left to eat, but the chocolate consumption is tailing off - along with the children’s chocolate-induced hyperactivity. I’m ashamed to say that I also haven’t managed to make it to the gym in TWO WEEKS! Trying to juggle the kids, the trail of mess that the kids constantly make, plus the blog and numerous family days out - and something had to give....
One of my earliest recipes - first written around this time 4 years ago was for these banana oat cookies. They’re such a great way to use up those leftover spotty bananas. What’s more, they’re pretty healthy too - I’ve got no qualms about letting the kids eat them for breakfast (I’m counting the chocolate chips as being good for the soul!). Six ingredients, no resting time, no flour, no eggs or butter (you could even make them vegan if you swap the chocolate chips for raisins or carob chips)....

As you may know if you’ve been reading my blog, I’ve been on a mission to lose weight for Summer. I finally hit my target the day-before-yesterday - losing 14 pounds over the course of 10 weeks! Just make sure you have a light dinner before putting this cheesecake on the table. You really want to save room for this peanut butter and snickers-laden dessert. It’s seriously rich, so you don’t need much to satisfy that sweet tooth. You’ll probably end up eating more than you should though. I considered chopping the Snickers bars up into tiny little pieces to sprinkle on top of this cheesecake, but instead I decided to go for big thick manly slices....
Warm porridge (or oatmeal for my non-UK readers) is great for a staple breakfast, but have you every tried it cold? Not cooked and then left to cool. These oats are soaked overnight in milk so they’re ready to eat in the morning. A hearty-yet-healthy meal you can make ahead - now that’s my kind of breakfast! Use whatever milk you like - regular, coconut, almond - you could even go for chocolate milk if you want to indulge (no, that’s definitely not me, no - she says ignoring the last post of creme egg with cinnamon toast soldiers……)....
