I’ve just done a quick count and I’ve found that we’ve got more than 20 curry recipes on Kitchen Sanctuary! I guess I just really like curry. We make curry at home at least once, and usually twice, a week. Quite often we’ll make our own curry paste, but sometimes we’ll use store-bought paste if we’re in a hurry (or just too hungry to wait!). I can’t believe I’ve never shared my nougat recipe with you before. What was I thinking?? I discovered the technique when I was trying to make another recipe for popcorn marshmallow lollipops. It went completely wrong, and all the popcorn fell off the sticks whilst I was taking the photos, but I found that the melted marshmallows transformed into a denser (is that even a word?), less squishy form once cooled....
One pot dinners - I LOVE them! Especially speedy pasta versions. Perfect for getting dinner on the table before the kids start having an after-school hunger meltdown! This AMAZING Cajun Chicken pasta one pot has piles of Cajun chicken and chorizo all cooked together in a creamy tomato sauce. I like to add plenty of veg such a spinach, peppers and fresh tomatoes too. This is my attempt at not posting anything sweet during January. In my defence, I’ve come to the conclusion that life without cake is boring. I’m sure it’s far better for you to have a cake every now and then (like every other day, not once a month - that’d be ridiculous) than to have no cake. Cake = endorphins No cake = miserable Nicky (who ends up hiding in a cupboard anyway - eating chocolate chips from the baking shelf or that Christmas chocolate I found down the back of the sofa) So I’m sticking to cake....

I love that it’s socially acceptable to eat cake at 10:30am and call it brunch. It makes my cake addiction almost sound posh 🙂 If you don’t eat it all at once, you’ll have enough left for afternoon tea too. Double posh! As a blogger and freelancer, I often find I have boundaries to work within - whether it’s a pasta recipe for a brand, an easy picnic recipe for a website or a seasonal recipe for Kitchen Sanctuary (usually start on these at least a couple of weeks before the season starts)....
So I may have been slightly drunk when I took these photos. Just being honest here….. A hot sunny day, the BBQ was out and I was testing out those prosecco popsicles and photographing (aka sampling) a Dark & Stormy or two. In my slightly tiddly (at that point) state, I decided it would be a great idea to mix the leftover prosecco with the spicy ginger beer from the cocktail....

A really quick and super easy recipe for you today. You might know that I absolutely adore Thai food - be it Thai Sweet Potato Skins, Thai fishcakes, Thai chicken or this Thai Prawn Salad. One of my absolute favourites is a simple Thai green curry though. Although I often make sauces from scratch, Thai green curry paste is something I generally buy. They vary quite a lot in heat, flavour and calories - but my favourite is the Thai Taste one....
