I think this may be the most American looking recipe title I’ve ever written. Being from the UK, enchiladas are not a hugely common dish. Risotto is one of those recipes I’ve come to love over the years. I used to think it was a bit bland, but at that point I guess I’d never had really good risotto. The only reason I EVER buy those part baked petit pains in the store is for these stuffed breads (oh and these stuffed breads). Filled with crispy bacon, wilted spinach and melted cheese they turn those pallid-looking, play-doh smelling rolls into the most amazing lunch! I made these last week when we had some guests, There were certainly lots of oohs and ahhs as the bacon sizzled, and also when the spinach was wilted down in that lovely bacon fat (I know I know - how to make a superfood into a superbad (but crazy-delicious) food)....

Oh. My. Yum. Do you know how many veggies I can eat when they’re whizzed up with cream and cheese and then topped with croutons, chilli flakes and little baby salad leaves? A whole lot. I like to think the extra added veggies balance out the cream and cheese, and if you wanted to get even more green in there, you could top with some spring onions (scallions) and pea shoots too....
I worked in a fried chicken shop for 5 years when I was at high school and college, so I know my crispy chicken tenders! Back then, most of the chicken was chopped in store on a bandsaw, but sometimes, when the cut stuff was running low, we had to get the cleaver out. Yep, a 15-year old, with a cleaver, trying not to cut any fingers off. We also had a massive old pressure cooker, a burger grill that literally spat out flames (those burgers tasted amazing though) and more than a few interesting/scary customers....
Sweet and Sour chicken is one of my favourite Chinese dishes, along with Peking duck, and Crispy Chilli Beef. However, I do tend to regret getting a takeaway when I’m sat on the sofa later feeling overly full, thirsty and generally unhealthy. So this is my way of doing things at home. I’m not denying it - it’s still got a bit of naughtiness in there, so it hasn’t made my skinny eats category but this is way better than your average Chinese takeout....
I haven’t posted a hot smoothie recipe in ages! It’s still far too cold for icy green smoothies, so I like to change it up and try different types of warm smoothie recipes! Apart from this slightly spicy and chocolaty Mexican Hot Chocolate Breakfast Smoothie, a couple of my favourites are the apple, elderflower and pomegranate hot smoothie, and the oaty mocha hot smoothie! I’m getting in there early with a pomegranate-rum cocktail I’ve been ’testing’. It started off with more rum and less pomegranate juice, but I soon realised it was perhaps a little too strong (like 5 sips and I was giggling strong).
