I always try to keep some chicken thigh fillets in the freezer so I can whip up fakeaway meals like this when the family are feeling particularly fussy about dinner.This cashew chicken, my honey garlic chicken and salt and pepper chicken are my chicken-thigh go-to recipes. The chicken thighs are coated in egg, cornflour and seasoning (I do it all in one bowl to save on washing up) then fried to crisp perfection....

I haven’t posted a soup recipe for ages! I’m almost glad summer is over so I can start making my favourite type of lunch again! Why is this my FIRST gnocchi recipe on the blog? 😳 It’s so quick and easy to serve up a lip-smacking dinner using store-bough gnocchi. I love that it can take BIG flavours like chorizo and harissa and soak them all up. I took inspiration from my ravioli sauce recipe (which uses store-bought ravioli) with the tangy, creamy sauce, but decided to go with harissa to give it a bit of heat and coconut milk to give it that creamyness....

Sounds naughty, but actually it’s pretty healthy. Crunchy homemade granola, layered with Greek yogurt and caramelized grilled peaches. Take this to work in a little mason jar and you’ll feel way more energised than wolfing down a piece of buttered toast as you run out the door. I nearly always have blueberries in my granola/yogurt, but these peaches make a really tasty change. You can cook them under the grill, on the griddle or even on the BBQ the night before, then just let them cool before chopping, wrapping and refrigerating them for the next day....

Have you ever tried a Pot Noodle? They’re something of a student food icon in the UK. Pour some boiling water on, straight from the kettle, leave to stand for a few minutes and hey presto! Dried noodles and other…erm…things… suddenly transform into a meal for one. To be honest I was never that keen. I could manage the beef & tomato variety (with a large extra squirt of ketchup) when I was a starving student, but I tended to stick to a diet of toast, beer and chocolate - supplemented by the 3-times-weekly free burger meal from my part time job at a fast food restaurant....

Slow-Cooked Lamb Massaman Curry. Ahhh just the title makes my mouth water. I often make curries using chopped up beef or chicken, but this one is made using a whole lamb shoulder. What is the best cut of lamb for a curry? I recommend using Lamb that is on the bone. Using Lamb on the bone gives the curry such a wonderful flavour and, after slow cooking, you get that amazing tender fall apart meat. Cooking the curry slowly with the meat on the bone, means you get SO MUCH flavour in the sauce....

Why does pastry have to be so darn tasty! I don’t think I’ve ever eaten anything wrapped in pastry that didn’t taste good. I just stopped, sat there and thought about that really hard for a couple of minutes, and no, there’s nothing. Hail to the pastry. These lemon puffs are no exception. A flat bottom layer of crunchy sweet pastry, topped with zesty cheesecake flavours, and then finished off with a big, flaky, puffy top layer of more golden, sweetened pastry....

Who wants to glug a freezing cold smoothie in the colder months? Not me. I do like the simplicity and nutritional kick of a smoothie though, so I often make hot smoothies instead. Sounds a little weird, but they really don’t have to taste like soup. Go for oaty/malty flavours or fresh fruity flavours (never a combination of the two!!) and you can keep that smoothie maker out all through winter....

I always cook rice when I’m making curry. It’s an automatic thing. Even if we’re having naan breads or chapatis, I go into autopilot and put on a pan of boiled rice. So it was actually kind of nice for once, having the recipe out in front of me to follow step by step, to take me out of that autopilot setting. And it made such a lovely change! If you saw my first review of HelloFresh about a year and a half ago (the Cajun Pork with Bulgar Wheat and Garlicky Greens post) that was the first time I’d ever cooked with bulgar wheat (which is now a store cupboard staple - love making tabbouleh!...

Oops - hope no-one’s going to tell me off for encouraging that sugar rush! As a self-confessed chocoholic trying to encourage my kids not to be sweetie-obsessed I know it’s hard. I’ve read that sugar doesn’t actually cause hyperactivity, but I’m not at all convinced. The resulting behaviour of my kids after a packet of haribo versus my kids after a bowl of strawberries is very different. So generally we try to keep chocolate and sweets until the weekend - when they’ve got plenty of time and space to run it off!...

One of the things that makes this dinner great for date night is that Chris lovingly gives me all of his mushrooms.I’ve been working on him for 17 years to get him to eat mushrooms, and I can still only get him to eat them when they’re chopped up into tiny pieces and hidden in something like spaghetti bolognese. I get that they’ve got a unique texture, but I just don’t understand what’s not to love!...

I’m always adding more meat-free meals to our menu.We try to have one or two meat-free meals a week, and it’s always a challenge coming up with something Chris will enjoy. He’s really fussy when it comes to veggie food. This veggie curry is a winner! - vibrant, comforting, creamy and it’s also about 2-3 portions of your 5-a-day! I only realized when I was writing this, that this curry is accidentally vegan too....
