I’m the only one in my family who likes mushrooms, but that doesn’t stop me making this creamy mushroom sauce when I cook steak at home. Chris lets me have his mushrooms and just has extra creamy sauce, so it’s win-win if you ask me. The sauce is creamy, velvety and so delicious, I love to use Chestnut Mushrooms, but you can use any of your favourite mushrooms. This creamy mushroom sauce is so good over steak, but it goes just as well over pasta with a little parmesan cheese....

Making homemade chips were one of the first things I tested when I finally got around to buying my air fryer.I tried a number of different methods: Soaking the potatoes in water, then patting dry before air frying. Verdict: The outcome didn’t warrant the effort and time of washing and drying the potatoes. Yes, the idea is to remove excess starch so the potatoes don’t burn before they’re cooked. But I found I could cook them without soaking, and they were ALWAYs cooked in the middle before the outside got too brown....

OMG this pasta has so much flavour! Sounds a little bizzarre, but to get this much taste it basically involves marinating the pasta in the pan until it absorbs the juices from the veggie packed sauce. Leave it for 30 minutes or even for a day before reheating and slurping up every last bite. I’ve been making this dish for years, and find it’s great - not only as a prep-ahead meal to reheat for a quick tea - but also for when you’re cooking for a crowd....

Chicken, peppers and onions cooked in a creamy coconut curry sauce. This is my easy recipe - using curry paste to speed up the process.Yep, the air fryer doesn’t have to be used only for dry foods. You can make saucy foods too. You just need one additional piece of equipment - a cake barrel insert (more on this later). Ok, hands up. This soup is literally the filling I use for my chicken pot pie. Are you on a bit of a January health kick like me? Ha ha I like the way that sounds like I’m going to be all about the fitness and good eating for a month. In reality January is so far, more of a comfortable warm-up. A few workouts and some healthy meals, interspersed with the odd G&T and bar of chocolate. That probably means I’ll be looking at a gradual weight loss from the pounds I put on over Xmas (and most of last year if I’m honest)....

Roast lamb just wouldn’t be the same without mint sauce. Fresh and tangy it really adds an extra layer of flavour to that roast dinner. Mint sauce as an accompaniment to lamb is a very British thing. We do have mint jelly too, but mint sauce is way more popular. Lamb used to be a lot more fatty than it is nowadays, and the sharp taste of the mint and vinegar helped to cut through that fattiness....

Currently I’m trying not to feel guilty that I haven’t posted in 12 days! I usually try to post a recipe a couple of times a week, but last week was just not one of those weeks. We filmed 9 videos and did a few photo shoots too. One top of that, Lewis had a choir performance in Manchester, Gracey was in a musical performance all week, we had various deliveries of new kitchen appliances, old appliances taken out, boxes EVERYWHERE (and still there now), 2 lots of installation engineers, and Chris had his foot rested up and iced for a couple of days (he couldn’t drive all week, so I was ferrying everyone around, whilst he spent a lot of the time hobbling)....

Have you tried gochujang yet? I like to use it when I make my spicy pork ramen, my Korean beef bulgogi bowl , Korean Steak Sandwich and also as a dipping sauce for veggie bibimbap. It’s a korean sauce or paste with a smoky-sweet and slightly spicy flavour. Some brands are spicier than others. I’ve been using the paste (rather than the sauce) a lot recently - which has got a bit of a kick, but the kids will still eat so long as they have a big drink of water!...
